Salmon Feta Parcels

  • 225g per person skinned salmon fillet
  • 50g feta cheese
  • 4-6 sheets filo pastry
  • Bunch of fresh coriander
  • Bunch of fresh parsley
  • Garlic
  • Salt and pepper
  • Olive oil
  • Eggwash



  • Finely chop the coriander, parsley and garlic
  • Season with salt and pepper adding a couple of tablespoons of olive oil then mix
  • Lay out the pastry brushing the edges with eggwash
  • Place the salmon in the centre
  • Put the coriander mix on top of the salmon then put a layer of feta cheese over this
  • Fold the pastry over the salmon in a parcel like fashion thenuse the eggwash to dampen the pastry and seal
  • Brush the parcel with eggwash and place in oven on 180 on a low shelf for approx. 30 mins 

It’s super easy and the flavours really complement one another.
