Salmon Feta Parcels

METHOD
- Finely chop the coriander, parsley and garlic
- Season with salt and pepper adding a couple of tablespoons of olive oil then mix
- Lay out the pastry brushing the edges with eggwash
- Place the salmon in the centre
- Put the coriander mix on top of the salmon then put a layer of feta cheese over this
- Fold the pastry over the salmon in a parcel like fashion thenuse the eggwash to dampen the pastry and seal
- Brush the parcel with eggwash and place in oven on 180 on a low shelf for approx. 30 mins
It’s super easy and the flavours really complement one another.
