Boiled bacon ribs

ingredients

  • 2 sheets of Kellen's bacon ribs
  • 2 carrots
  • 1 head of broccoli
  • 12 brussels sprouts
  • 4 tbsp rice vinegar
  • 1 tsp honey
  • 1 clove of garlic, peeled & sliced
  • 1 medium chilli sliced
  • Salt to season
  • Juice of 1 lime
  • Bread & butter to serve

 

METHOD

  • Cover ribs in a large pot of cold water & bring to the boil
  • Turn down ribs to simmer for about 2 hours until bones separate from flesh
  • Chop vegetables & boil until tender
  • Mix ingredients for the dressing: lime, honey, vinegar, garlic, chilli, salt & dress cooked vegetables in half of the dressing
  • Remove ribs from the pot & cover in the remaining dressing
  • Serve with buttered bread
  • Enjoy!
