Mexican Vegetable Burrito

Ingredients (Serves 4)

  • 1 sachet Colman's Mexican style Burrito Seasoning mix
  • 30 ml olive oil
  • 220 g mixed peppers
  • 130 g onions
  • 150 g carrots
  • 250 g cooked rice
  • 4 tortilla wraps
  • 120 g lettuce


  • Slice all the vegetables into thin strips.

  • Heat the olive oil in a large frying pan, add the vegetables, and cook for 2-3 minutes. Sprinkle in the Colman's Burrito seasoning and cook for a further 2-3 minutes.

  • Re-heat the rice, warm the tortillas, and shred the lettuce. Spoon the vegetables into the middle of the tortilla, top with rice and lettuce, then fold over, tuck in the sides, and roll over to form the burrito. Enjoy!



Try using sweet potato, charred corn, or chicken in the mix! Serve as per instructions.
