Fish Finger Wraps

Colman's Tartare Sauce brings the tangy zing that takes homemade fish fingers to a a whole new level of delicious dinner times!

Ingredients (Serves 4)

  • 3 cod fillets
  • 50 grams plain flour
  • 100 grams panko breadcrumbs
  • 1 large egg
  • 4 tortilla wraps
  • 1 cucumber
  • 1 romaine lettuce
  • 4 tomatoes
  • Colman's Tartare Sauce
  • 1 lemon quartered lengthways

Method

  • Heat oven to 190C/170C fan/gas 5. Line a baking tray with baking parchment and put in the oven to heat up. Slice each fish fillet into four or five thick fingers.

  • Tip the flour into a bowl and season with black pepper. Crack the egg into a second bowl and lightly beat with a fork. Tip the breadcrumbs and zest into a third shallow bowl and mix together. Dip the fish into the flour, then the egg, then the breadcrumbs.

  • Bake the fish fingers on the hot tray for 20 mins, turning once.

  • Let everyone help themselves, starting with a dollop of Colman's tartare sauce on a wrap, followed by the crunchy salad, then fish. Finish with a squeeze of lemon.
