Cheesy Baked Eggs

Ingredients (Serves 4)

  • 4 eggs
  • 50 grams cheddar grated
  • 50 grams butter
  • 2.5 tablespoons flour
  • 100 millilitres milk
  • 1 tablespoon Colman's mustard
  • 2 tablespoons chives finely chopped


  • Preheat oven to 180c fan.

  • Spray muffin tin (8 spots) and then line the base with grated cheese. Put in the oven for about 10-12 mins (until base is crispy and golden).

  • In the meantime, make the sauce. In a pan, melt butter then sprinkle in flour until combined into a paste.

  • Remove from heat.

  • Add milk and mustard and whisk together until smooth.

  • Whisk buttery sauce into 4 eggs.

  • Remove muffin tin from oven and leave to cool.

  • Pour egg mixture over the crispy cheese bases and put back into the oven for 15-20 mins.

  • Serve with a sprinkling of chives.
