Preheat oven to 180c fan.
Spray muffin tin (8 spots) and then line the base with grated cheese. Put in the oven for about 10-12 mins (until base is crispy and golden).
In the meantime, make the sauce. In a pan, melt butter then sprinkle in flour until combined into a paste.
Remove from heat.
Add milk and mustard and whisk together until smooth.
Whisk buttery sauce into 4 eggs.
Remove muffin tin from oven and leave to cool.
Pour egg mixture over the crispy cheese bases and put back into the oven for 15-20 mins.
Serve with a sprinkling of chives.
